PUT THE DONUT DOWN :: Salted Caramel Protein Pancakes

Me and Kc are heading back home tonight for 3 days to spend time with family, and I’m Christmas’ing it out today getting ready – wrapping presents, baking desserts, trying to find Whiskey’s Christmas sweater (I think he hid it), etc. Since we will be away from home for a long weekend, usually with holidays comes bad eating … and I’m totally fine with that. I don’t stress about my eating on the holidays because it’s a time for a mini vaca and stress free livin’. With that being said, I don’t binge on cookies all day (maybe) I just eat intuitively and listen to my body!

Anywho, I’m trying to eat clean all day today so it’s not just another day of junk BUT I already have a huge sweet tooth. So, I made some Salted Caramel Protein Pancakes with Sugar – Free Syrup dis mornin’. Here’s the recipe my lil elves ::

ingredients: 

  • 1 scoop of Quest Salted Caramel Protein Powder
  • 1/2 cup old fashioned oats
  • 2 TBSP water
  • 2 large brown eggs
  • cinnamon

instructions: 

  • combine all of the ingredients in a bowl and mix
  • spray pan with coconut oil or any non-stick spray
  • cook pancakes over medium heat (I do notch 4)
  • flip until golden – brown & cooked all the way through
  • sprinkle with cinnamon & choice of toppings
  • serve & enjoyyyyyy

topping options: 

  • fruit :: banana, rasperries, blueberries, strawberries, etc.
  • “syrup” :: sugar – free syrup, honey, peanut butter

nutrition (with no fruit & sugar – free syrup):

415 calories | 32 g carbs | 12 g fat | 39 g protein
