Chicken Avocado Salad πŸ₯‘

Happy Tuesday !

After the holidays I always feel sluggish and out of whack from all of the good but unhealthy food. Sooooo I’m getting back on track today with some fresh veggies and chicken! It’s a great source of vitamins and protein and has my body feelin’ back to normal . Here’s the recipe ::


  • 1/2 a chopped avocado
  • 1/2 a chopped orange pepper
  • 7 chopped carrots
  • 8 oz chopped chicken
  • 2 TBSP Litehouse jalapeno ranch
  • 1 cup garden salad
  • 1 cup spinachΒ mix salad
  • 2 TBSP whole grain croutons


  • Cut fat off of chicken and season both sides with garlic salt
  • Cook chicken over medium heat (notch 4) until cooked thoroughly
  • chop chicken up to cook quicker and more thoroughly
  • chop up veggies: avocado, orange pepper, carrots
  • combine lettuce, spinach, veggies, croutons in large bowl
  • remove chicken from heat once it is cooked, and let set to cool down a little so it doesn’t make the lettuce hot and soggy
  • combine chicken and toss with dressing
  • serve & enjoy!
