Egg & Avocado Breakfast Sandwich πŸ³

Good Mornin’ … I guess afternoon now πŸ™ˆ

I’m procrastinating to the max today, but oh well, we all need days like that right !?

This morning I made a simple egg sandwich, and before you say ewww egg sandwich give it a try! This is super high in healthy fats from the avocado and eggs and the eggs also give you some protein! Here’s how I do this thang :


Ingredients:Β 

  • 1 slice of whole oat bread
  • 2 large brown eggs
  • 1/2 a chopped orange pepper
  • 1/2 a chopped Avocado
  • pink Himalayan salt
  • a couple slices of deli turkey or ham (I buy mine over the counter from a local deli. Deli meat is said to have less preservatives and be lower in sodium than pre-packaged meat)

Instructions:Β 

  • in a large saucepan, cook 2 eggs and meat over medium heat (notch 4)
  • cook eggs however you prefer, I just scramble them up and call it good
  • cook eggs until cooked all the way through
  • toast bread in toaster or on the stove top in a pan over medium heat
  • place chopped Avocado on bread and sprinkle pink salt on top
  • add meat and eggs and top with peppers (can add any veggies you want: tomatos, spinach, onions, etc.)
  • serve & enjoy dem eggs
