Happy Sunny Sunday :):)

Ever since me and Kc picked up our 1/2 of a cow, we have been eating A LOT of beef. We blew through the steaks pretty quickly (shocker) but we still have SO MUCH ground beef left over. I didn’t want to get burnt out on ground beef this year like I did last year by eating the same couple of things with it: basic hamburgers and spaghetti sometimes lol, so I’ve been trying out a bunch of new healthy recipes & twists on basic recipes to spice things up and keep it interesting! Here’s one of my new favorite ways to eat ground beef AND it’s a perfect recipe for summer: Healthy Guacamole & BBQ Sloppy Joe’s 🙂

  • 4 oz of lean ground beef
  • 1/2 a mini package of ‘Wholly Guacamole’ in the flavor ‘spicy homestyle’
    • You can choose any flavor you like! I like the ‘spicy homestyle’ flavor because it’s a medium level of spiciness (I can’t handle crazy spicy things)!! The traditional one is good, I just feel like it needs a lil more flavor and that’s what the spicy homestyle does for me 🙂
      • If you buy the regular sized ‘Wholly Guacamole’ that comes in just one container, use almostttttt 2 TBSP of the guac. You are welcome to use less, this is just what measurement I’m basing the nutrition listed at the bottom of the page upon 🙂
    • OR if you don’t want to buy the Wholly Guacamole packages, no problem!! Instead use 1/2 an avocado, some diced up onions, tomatoes, a little bit of lime juice and some pink Himalayan salt and stir it all together for some yummy homemade guac!!! (I’ll for sure do a full post on my homemade guac and healthy dipping options in the future because I love me some guac 🙂
      • Nutrition listed below is based upon the recipe using the serving size listed above of the wholly guacamole so just keep that in mind!!
  • 1 whole grain hamburger bun
  • 1/2 a TBSP BBQ sauce of your choice
  • optional: a little bit of chopped up onion

  1. Cook thawed lean ground beef over medium-high heat in a small or medium sized cooking pan
  2. As the beef is cooking, take a spatula and chop the beef into small chunks to form the ‘sloppy joe’ texture (also helps the beef cook quicker in my opinion)
  3. Once the beef has no raw bright, light pink showing, it is done cooking (use best judgement)
  4. Remove the beef from the heat and set aside
  5. Toast the bun either in a toaster or in a pan on the stove top at high heat
  6. Once the bun is toasted to your preference, plate the bun
  7. Spread guac on both sides of the bun evenly
  8. Plate the cooked ground beef on the avocado bun
  9. Top with BBQ sauce
  10. Serve & enjoy your sloppy joe!!

** I didn’t season my ground beef in this recipe like I usually do whenever I cook ground beef because the recipe has so much flavor being brought in from the guac, BBQ sauce and bun that it’s fine to just leave the beef as it is in my opinion 🙂 **
